Get-Your-Tang-On Lemon Tartlets

Sometimes I simply crave a bracingly tangy taste of citrus and these lemon mini tartlets fit the bill perfectly. When you want to get your tang on give these a try! The vanilla cream is a lovely touch to round out the flavour sensation. 


16 frozen tartlet shells


2 eggs
1 whole lemon (chopped into quarters - remove seeds and membranes)
1/4 cup melted butter
1 teaspoon vanilla extract
3/4 cup LIVA date sugar

Vanilla cream:
1/2 cup whipping cream
1/4 cup LIVA date sugar
1 teaspoon vanilla extract 



Preheat oven to 180C/350F
Pre-bake tartlet shells (as per package instructions)

For the filling:
Add all filling ingredients to a blender (yes, even the lemon with the rind!)
Blend until fully combined and smooth

Pour filling into tartlets

Bake for 18 - 20 minutes until filling is set

Remove and cool

For the vanilla cream:
Whisk all ingredients until stiff peaks form
Pipe onto cooled tartlets
