Banana Muffins

To celebrate a special graduation event, I wanted to share some gluten-free banana muffins with my students and colleagues. It's one of my favorite healthy and tasty one-bowl baking recipes, so be sure to save and share!
Ingredients
- 2 cups oat flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon powder
- 1 tsp ground nutmeg
- 1/2 cup cacao nibs
- 3/4 cups rolled oats
- A pinch of sea salt
- 2 large eggs
- 3 very ripe bananas
- 1 tbsp vanilla extract
- 1/4 cup raw date syrup
- 1 cup coconut oil
Directions
Mix everything in the above list, pour into a prepared muffin pan, and bake at 375°F for 15 minutes until golden brown. Serve immediately wholeheartedly with a bit of plant-based based butter earth balance and enjoy!
