5 Ingredient Lemon Coconut Energy Balls

These little balls are perfect to kickstart your day with the refreshing lemon taste, or a great snack to have on hand. 

The healthy fats from the coconut will keep you full and satiated in these balls. Adding in LIVA date sugar can contribute to keeping your blood sugar levels from spiking, and it adds a sweet taste that you'll love!

1 cup raw cashews⁠
1 cup shredded coconut⁠
juice of 1 lemon⁠
1.5 tbsp coconut oil⁠
1 tbsp LIVA date sugar⁠

1. Place all ingredients in a blender⁠
2. Roll into balls and refrigerate
*Try adding in a pinch of turmeric for added inflammatory benefits! 





These are delicious! Added in the zest of the lemon used for the recipe, as well as the suggested turmeric.
