On-purpose Banana Loaf
Do you know when we usually whip up banana bread? When we discover some overripe bananas lurking in the bottom of the fruit bowl! This recipe changed all that for me. Now we buy ripe bananas on purpose just to bake this nourishing and satisfying loaf of goodness. Bet you’ll start doing the same thing.
Ingredients:
2 ripe bananas
2 eggs
1/3 cup oil
2 tbsp whole milk
3 tbsp Crème Fraiche
1 3/4 cup LIVA date sugar
2 tsp pure vanilla extract
1 2/3 cups all-purpose flour
1 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
1/8 tsp nutmeg
1 cup toasted walnuts (optional)
yields 1 9x5 loaf
Directions
- Preheat oven to 180C/350F
- Mash bananas in a large bowl
- Whisk in wet ingredients, including date sugar.
- Sift dry ingredients into wet and
- Mix with a rubber spatula until fully blended
- Mix in half of the walnuts
- Pour into greased 9x5 loaf pan
- Top with remaining walnuts
- Bake for 60 – 75 mins until an inserted knife comes out clean
- Let cool before cutting
