Free the Brownies

We have to admit it - one of the treats we really really missed in our pre-LIVA days was a wonderfully dark and indulgent brownie. Now, we’ve got a recipe that will again fill the kitchen with that memorable chocolately aroma and put a guilt-free snack in the hands of those you love. We have freed the brownie so it can once again roam free in your basket of treats.

Ingredients
1/2 cup tapioca flour
1/2 cup arrowroot flour
1/2 cup unsweetened cocoa powder
2/3 cup LIVA date sugar
1/2 cup unsweetened coconut flakes
1/2 cup sugar-free dark chocolate chips
1 egg
1 cup cream
1/2 cup water
1/2 cup grapeseed oil
1 cup walnuts (optional)

Optional chocolate glaze
1 bar bittersweet chocolate
2 tbsp heavy cream

Directions

  • Preheat oven to 180C/350F
  • Sift dry ingredients and put aside
  • Combine wet ingredients thoroughly then add dry ingredients and mix with a rubber spatula
  • Add walnuts (if using)
  • Add more water if the batter is too dense to spread
  • Pour into greased and parchment-paper lined 9-inch square pan and spread evenly
  • Bake for 25 mins
  • Let cool before cutting
  • Chocolate glaze option
  • Chop chocolate into chunks and pour warmed heavy cream on top
  • Let it sit for one minute then whisk into a smooth ganache
  • Pour over brownies in the pan and let cool
