Little Treasure Cupcakes

Who doesn’t love a cupcake? I don’t know anyone who doesn’t love to unwrap one of these little treasures and bite into an explosion of chocolate goodness.

1 1/2 cups all-purpose flour
3/4 cup cocoa powder
1 3/4 cups LIVA Date Sugar
1 tbsp baking soda
1/2 tsp salt
2 eggs
1/3 cup grape seed oil
3/4 cup buttermilk
2 tsp pure vanilla extract
1 cup hot coffee

12 oz cream cheese
2 tbsp butter
1/2 cup LIVA Date Sugar
1/4 cup cocoa


  • Preheat oven to 180C/350F
  • Sift dry ingredients into a bowl
  • Whisk eggs, oil, buttermilk and vanilla in a stand mixer for 2 minutes
  • Add LIVA date sugar and whisk for one minute more
  • Add dry ingredients all at once and mix on the lowest setting for 30 seconds
  • Slowly pour hot coffee into the mixed batter
  • Turn up mixer for 10 seconds just until everything has been properly incorporated
  • With a rubber spatula fold ingredients a few more times to ensure they are thoroughly mixed
  • Pour into cupcake pan* and bake for 18 mins

*If you’re using cupcake paper liners it’s sometimes helpful to give them a very light spraying with vegetable oil. It helps the cupcake release from the paper after they’ve cooked and cooled. However…some of us like eating the bits that stick to the paper!

For the frosting - whisk all ingredients until well incorporated

Let cupcakes cool then top with frosting.
