In a medium-sized bowl, whisk together the date syrup, white vinegar, soy sauce, Dijon mustard, minced garlic, smoked paprika, cumin, black pepper, salt, and cayenne pepper (if using). Mix until well combined.
Season the salmon fillets with salt, pepper, and garlic powder. Pour about ¼ of the BBQ sauce in a pouring cup for after cooking use. Place the salmon fillets in the remaining sauce, cover and marinate for at least 2 hours in the fridge.
Preheat your non-stick grill to medium heat. Brush on some olive oil and butter to prevent the salmon from sticking.
Place the salmon fillets on the preheated grill and brush the date syrup BBQ sauce generously over the top of each fillet.
Cook the salmon for about 4-5 minutes per side, or until it reaches your desired level of doneness. While grilling, continue to brush the salmon with the sauce to enhance the flavor.
Once the salmon is cooked, remove it from the grill and let it rest for a few minutes before serving. Serve the salmon with additional reserved (1/4 reserved cup) date syrup BBQ sauce on the side for dipping or drizzling.
