Healthy Baked Carrot Donuts
Did some bunny say CARROT donuts?!
Celebrate spring festivities with these healthy and delicious spiced carrot donuts. They're made in the blender, and the sunflower seed butter glaze? It's the perfect complement!
Make them this weekend just in time to celebrate Easter with the family.
3/4 cup oat flour
1 tsp baking powder
2 tbsp chia seeds
2 tbsp LIVA Date Sugar
2 tsp cinnamon
1/2 tsp nutmeg
pinch of salt
1/4 shredded carrots
1/2 cup applesauce
1 tsp vanilla
2 tbsp Date syrup (or maple)
1.Pulse oat flour, baking powder, chia seeds, LIVA Date Sugar, cinnamon, nutmeg, salt in the blender (or bowl).
2. Add in eggs, carrots, applesauce, vanilla, and date syrup.
3. Spray donut pan with coconut oil spray. Pour batter into donut tray and bake at 350 for 12-15 minutes.
Here's how you can make the glaze:
1.On medium heat combine 2 tbsp sunflower butter and 2 tsp coconut oil in a pot on the stovetop. Consistency should be liquid but not too runny.
2. When donuts have cooled dip into glaze. Top with crumbled pecans.
If you are keeping these nut-free, just omit the pecan on top!
