To celebrate a special event, I wanted to share some gluten-free banana muffins with our guests. This is a favorite healthy and tasty one-bowl baking recipes, so be sure to save and share!
Ingredients
- 2 cups oat flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon powder
- 1 tsp ground nutmeg
- 1/2 cup cacao nibs
- 3/4 cups rolled oats
- A pinch of sea salt
- 2 large eggs
- 3 very ripe bananas
- 1 tbsp vanilla extract
¼ cup LIVA Date Syrup
- 1 cup coconut oil
Directions
Mix everything in the list above into a bowl in the order they appear, then pour into a prepared muffin pan.
Bake at 375°F for 15 minutes until golden brown.
Serve immediately with a bit of your butter of choice and enjoy!
