Ingredients
- 1 cup finely grated carrot
- 2 cups oat flour (can be made by blending rolled oats)
- 1 tsp baking soda
- 1 tsp baking powder
- 3 eggs
- 1 tbsp vanilla extract
- 3 tbsps olive oil
- 1 tsp grated ginger
- 3 tbsps raw date syrup
- 1 tsp cinnamon
- 1 tsp nutmeg
- A pinch of sea salt
- 1/3 cup chopped walnuts
- 1 package light cream cheese
- 1/2 tsp vanilla extract
- 2 tbsps raw date syrup
- 1 tbsp fresh lemon juice

Directions
Mix all the wet ingredients for the cake in a large bowl, then slowly sift in the dry ingredients. Pour the batter into a prepared loaf pan and bake at 400°F for 50 to 55 minutes, or until a toothpick inserted in the center comes out clean. While the cake cools, combine all the frosting ingredients, except for the walnuts. Generously frost the cake, garnish with walnuts, slice, and serve. Enjoy!
