CRANBERRY WALNUT WHITE CHOCOLATE COOKIES

This recipe made its debut on Valentine’s Day. It was such a BIG hit; it became a weekly staple in our cookie jars. It’s gluten free (or not if you prefer) and made without any refined sugar.
Ingredients
- ½ cup unsalted butter
- 1 cup LIVA Date Sugar
- 1 egg
- 2 tsp vanilla extract
- 1tsp baking soda
- ½ tsp kosher salt
- 1 tsp cinnamon
- ¾ cup all purpose flour (or gluten free flour, if you prefer)
- 1 ½ cup rolled oats
- 1/3 cup fresh cranberries
- 1/3 cup white chocolate, chopped up into chip sized pieces
- 1/3 cup walnuts, or pecans if you prefer
Directions
- Beat butter and sugar together for 2 minutes.
- Add egg and vanilla and beat for another minute.
- Add cinnamon, baking soda, salt and flour and mix until combined.
- Fold in oats, cranberries, chocolate and nuts until just combined.
- Using a 1-inch scoop, scoop out batter and place evenly spaced on a baking sheet lined with parchment paper.
- Bake at 350° for 10 minutes. Enjoy!
