LUBAINA’S FAMOUS FUDGY BROWNIES – PLANT BASED VERSION

One version or another of this recipe has been enjoyed by my family for years. In November 2023, this plant-based one helped me slay the Dragons on Dragon’s Den. It produces a rich, dark fudgy brownie without the spikes in blood sugar often associated with other sweeteners. These brownies are extra moist and delicious because dates are hygroscopic: They attract water. Enjoy!
Ingredients
- 1 + 1/2 cups of finely chopped dates
- 1 tsp baking soda

1/4 cup of LIVA Date Syrup
- 1/8 cup of water
- 2 small bowls or containers each with 1 tbs of white vinegar + 1 tsp baking soda
- 1/2 cup virgin coconut oil or vegan butter
- 1 tsp pure vanilla extract
- 1 + 1/4 cup LIVA raw date sugar
- 1/3 cup of vegan Dutch cocoa
- 1/2 cup gluten free or almond flour
- 1/2 tsp baking powder
- 3/4 cup vegan chocolate chips or chopped chocolate (70% cacao)
Directions
- Preheat the oven to 340F.
- Line an 8" x 8" baking pan with parchment paper.
- Combine the finely chopped dates, 1/4 cup of the date syrup and the baking soda in a small pan. If too thick, slowing add 1/8 of a cup of water and bring to a boil. Simmer for one more minute, remove from heat and add your virgin coconut oil or plant-based butter to the pot.
- Pour the mixture in a mixing bowl and mix on the highest speed possible until the date mixture is a creamy consistency.
- Stir in the vinegar and baking soda combinations one at a time and combine well after each addition. Then, add in the vanilla extract and mix well.
- In another bowl, whisk the date sugar, cocoa, flour and baking powder together.
- Slowly add the dry ingredient mix to the date mixture until blended. Then, add in the chocolate chips or chunks.
- Smooth the blended mixture into your prepared pan and bake for approximately 40 minutes or until set in the middle and the sides begin to come away from the pan.
- Leave to fully cool before cutting the baked brownie mix into squares sized to your liking.
- STORAGE: 2 weeks in an airtight container or 3 months in the freezer.
- TIP: These brownies are even better the day after baking or freezing them.
