These nourishing peanut butter cups are a healthy twist on a Halloween classic! Made with dairy-free chocolate, creamy peanut butter, and date sugar, they’re a perfect indulgence for the season—rich, satisfying, and a sweet treat you can feel good about.
Ingredients
- 1 cup dairy-free semi-sweet chocolate
- 2 tsp coconut oil
- 1/2 cup unsweetened peanut butter
- 1-2 Tbsp almond flour (to thicken)
- 2 Tbsp date sugar
- 1/4 tsp sea salt
- Date syrup (for garnish)
Directions
Melt the chocolate and coconut oil in a small saucepan over medium heat, stirring constantly. Once about half the mixture is melted, remove from heat and stir until completely smooth. Line a muffin pan with paper liners. Fill the base of each liner with a layer of the chocolate mixture. Keep going until you have even chocolate shells. Reserve some melted chocolate for the top layer. Freeze the muffin pan for 5-10 minutes or until the chocolate firms up. For the peanut butter filling: Combine the peanut butter, almond flour (start with less), date sugar, and sea salt. Stir until smooth, adding more almond flour as needed until the mixture is no longer runny. It should hold its shape when scooped. Remove the chocolate from the freezer. Add 1 tbsp of peanut butter filling to each large muffin liner or 1 tsp for minis. Then cover with the reserved chocolate. Sprinkle with sea salt if desired. Freeze until fully set, then drizzle with date syrup and enjoy!
