Living inside me is a little girl and every year at this time she dreams vividly of shortbread, gingerbread and stained glass sugar cookies. She teems with excitement about rugelach, raisin-challah apple Betty, halwah and old-fashioned fruit cake laden with dried cherries, dates and candied citron.

It’s the time of year when bakers love to fire up the oven and create wonderful treats. And here’s where our story gets really exciting - you can have your cake and it eat too!

Because LIVA is lower in calories and delivers beneficial fibre and minerals you can bake up a storm knowing that your cakes and cookies and pastries will be completely delicious and healthier.

Use it just as you would white or brown sugar and unwrap some brilliant smiles!

We all have some family favourites and traditions for the holidays. You might be concerned about fiddling with the recipes. I can tell you that I’ve been hearing from a lot of people who now use LIVA on a regular basis. What they tell me is that not only does it work well in their recipes it adds a slight hint of caramel flavour to their creations and it doesn’t require any significant adjustments to deliver the desired results.

As a treat for you for this season we’re delighted to present one of our signature recipes. I am confident that cake will be received with wonder by your friends and family. Enjoy!

 

Indulgent Chocolate Cake & Coffee Cream 

This indulgence is for those special occasions when you really want to embrace your inner chocoholic and the coffee cream adds an indulgent kick.

Ingredients

For the cake:

1 1/3 cups all purpose flour

1/2 heaping cup unsweetened cocoa powder

1 tablespoon baking powder

1/2 teaspoon salt

2 sticks butter, melted

3 whole eggs

1/2 cup sour cream

2 teaspoons vanilla extract

2 1/2 cups LIVA date sugar

1 cup strong hot coffee (I like to use instant espresso!)

 

For the coffee cream:

1 cup heavy cream

1 tablespoon instant espresso coffee

1/4 cup LIVA date sugar

1 teaspoon vanilla extract

 

Directions

 Preheat oven to 180C/350F

Grease a 10-inch round cake pan

 

For the cake:

In a stand mixer, whisk eggs, melted butter and LIVA date sugar until well combined

Add sour cream and vanilla and whisk for 10 seconds

Sift all dry ingredients then add to bowl

Mix on stir setting while adding hot coffee in a steady stream

Stir for an additional 10 seconds

Remove from mixer and finish blend by gently folding batter with a rubber spatula

 Pour batter into prepared cake pan

Bake for 30 -35 minutes until a cake tester comes out clean

 

Turn out onto cooling rack and let cool completely

 

For the coffee cream:

Gently heat the cream and add 1 teaspoon instant espresso

Remove from heat until cool then place in refrigerator

 

When cream mixture is cold, whisk in vanilla and LIVA date sugar until it forms stiff peaks

 

Pipe or spread onto cooled cake
